To make the 

Carrot Cordial:

2 Cups Water

2 1/2 Cups Super Fine (Caster) Sugar

9 oz. Carrot peelings ( I used the carrots, too)

add all of the ingredients to a sauce pan and bring to a boil. Reduce heat, cover and simmer for 30 mins. Cool and strain into a glass jar and store in fridge for up to 1 month

2oz. Seedlip Grove 42

3/4 oz. Carrot Cordial

shake into a cocktail shaker filled with ice, straining into a rocks glass filled with ice. Top with soda/seltzer water and garnish with a sage leaf
