Today's Cocktail was the the Lavender Bees Knees

Lavender Bee's Knees Cocktail

2 oz gin

¾ oz lavender honey syrup

¾ oz fresh squeezed lemon juice

combine all of these ingredients in a cocktail shaker filled with ice and shake it until your hand gets cold. strain it into a coupe glass and add a twist of lemon, a honeycomb or a sprig of lavender to garnish.

To make the Honey Lavender syrup:

combine 1/4 of honey with 1/4 cup of water and about 2 T of lavender flowers over low heat. Stir the mixture until its totally combined which will take about 10 mins or so.

pull the mix off the heat and set aside to cool. Strain into a glass jar and keep in the fridge for up to 2 weeks.

I used Empress 1908 Gin, which is a beautiful purple gin that gets its color from butterfly pea blossom.
